Well i think I know a reason to some of your disappointment with Mario Galaxy.

When Mario 64 first came out, no one had ever seen a 3D game before like it, every aspect of the game had never been done before, it was extremely fresh and fun. 10 years later we have Mario Galaxy, 3D isn't as new anymore and you have come to expect a certain quality from Nintendo games, It's just not as magical as the first game because it wasn't first.

Think of it this way, had Mario Galaxy been released for the N64 and Super Mario 64 now, Galaxy would be absolutely amazing and Mario 64 would be a downgrade, it's really hard to compete against nostalgia and when you really break down the two games, Mario Galaxy has better gameplay, controls, design, music, and everything, but your memory of playing 64 first will always give you that "wow this game is awesome" feeling that is now nearly impossible to replicate..
