It's not a temple per se, but I liked the Twilight Princess version of Hyrule Castle. The themes have been done many times before, but the thing that made this one cool was how it progressed as you went up. It started out as a quiet rendition of the castle theme, but as you got closer and closer to the end, the castle theme would slowly get corrupted by Ganondorf's theme. By the time you reach the end, the tune has switched almost completely to Ganondorf's.
