But wouldn't you have to go through all that every time you create a new species?

 

No, just once. You have several "planets" (read: save spots) which you can populate and you can choose at which stage to start. You can only pick stages you have previously reached, so once you reach space age once you can always start off at space stage and you get to make your person all over again.
