GT5:P, Lair, and most PSN games are 1080p. There might be one or two more -- some sports games I think. You're not going to find many complex games, outside of a few genres which don't have to worry about fillrate (i.e. racing & space games) which are going to run 1080p. 720p is "HD" in any case.
1080p games will be the standard of the PS4/XBox720 generation. 720p will be the common resolution for this one -- the GPUs just don't have the fillrate to support it decently, except for simplistic titles.
The Wii could, theoretically, produce a near-720p, single-buffered internal image (maybe... I'm not really sure if it has the room for such a large screen buffer), and maybe even a 720p signal (although this may actually be limited by hardware to 480p), but I sincerely doubt the Hollywood GPU could run a game decently at that resolution.
