The first day on the Xbox 360 version has just about as few zombies running around as was shown on the Wii in that video. It could be the most zombies they will have on screen, but is this confirmed? I've played it, and even in the beginning there are many more zombies in the 360 version.
With that said, I think it's obvious this is merely intended to be a demonstration of the combat/gameplay since after the player traveled a reasonable distance there were no zombies around, while in the 360 version the only place you could truly escape zombies was the bathrooms or on top of somehting.
Capcom knows that a huge part of the reason many people buy/bought Dead Rising was to hack through hordes of zombies, so expect the final build to have significantly more than this video - maybe not as many as the 360, but still a lot.
