Again, there were no screens or video footage of the PS3 version of the game shown until this year. Up until that point all the screens and video were from the 360 version. If the 360 version was holding the game back the opposite would have been true.

As for your graphics point, you are right that a lot of reviews preferred of the PS3 version but the 360 version is technically superior. The game runs at a higher resolution with a higher rate and AA. This puts more strain the hardware. Especially considering that unlike the PS3 version, everything has to be streamed from the disk.
