If they stole your 360 and Wii, you should be able to contact Microsoft and Nintendo and have them keep an alert out for if your console connects back online. I am sure I've heard of at least 3 different cases of that method being used to track that stuff down.
As for why they didn't take the laptop or desktop, It's possible they couldn't find teh Power adapter for the laptop, and didn't want to go to the hassle of disconnecting the computer. it's also possible they didn't want to risk stealing those and finding out later that they were 10 year old computers or something that aren't worth the effort to take. The consoles are going to have a more standard value to them.
