Well you can't control it as much as you want, you can't have a full 360 turn... more like a 50 degree(?) turn. But trust me it's efficient in this kind of game as the whole game feels slow (in a good, creepy way).

As far as I remember, it also works like that in FF2.

 

You misunderstood me, or i misunderstood you.

Using the analog stick to look left or right while on camera mode allows for a full 360 turn, that's just not the case while twisting the remote.

 

I see. I think in FF2 you're even more limited than that, but I have to recheck that later.
