How would you collect star bits, how would you blow on the bubbles and where would the fun be in rolling the ball or wave riding, they would have been turned into a short, incredibly easy Monkey Ball and a simple race if using a control stick.
Similarly using pull stars or the sticky things in space junk (that you "pull" and let go to launch Mario) wouldn't work very well.
the spin attack and throwing fireballs etc are the only arguable things that could have been done with a button, but the little throwing action you perform for both (and skating/invisible boo) just works wonderfully and suits the actions too... a shake side-to-side just fits well for making Mario spin, while a throwing action fits throwing fireballs or launching into skating.... So we have boiled it down to 1 thing now: making boo Mario invisible.
1 action in the whole game that could have been done equally as well with a button.
