Sunshine 2, easily. Sunshine 1 is probably my favourite 3D Mario, or among them, whereas I've always thought Galaxy is overrated and nowhere near as fun.

Galaxy 3, as I really enjoyed Galaxy 1 and Galaxy 2. However, I have never really played Sunshine, so I may actually end up really enjoying it if I ever get to it.

Definitely sunshine 2, first and only one is still my favorite Mario game.

another mario game set in a beach setting only? why would i want that when i can have a mario game that has the beach setting plus other settings?

I would prefer it titled "Super Mario Moonshine", where Mario staggers across the streets of New Donk City.

Super Mario World was a true sequel to SMB3.

Super Mario Galaxy 2 > Super Mario Galaxy > Super Mario Sunshine

But every Super Mario game was great.

And you'd have a machine called F.L.I.D.D for Fine Liquors Injection Dozzing Device that would inject different kind of alchohol for different effect, like vodka would make you stronger, whisky would make you angry, tequila you put you on fire and jump higher, and absinthe would make you see psychedelic secrets

Sunshine was a good game, overshadowed by the hype that left Mario 64. However in saying that, its not needed. Odyssey is basically Sunshine without Flud and the Goo.
Galaxies is a different platformer all together and an awesome one at that. Definitely the Best game of last gen.

Ill go with Galaxy 3.

Isn't Knack 2 technically a Beat em' up now?

I'd go with Sunshine 2 because Sunshine was such a fresh game for the 3D Mario series. I'd love to see what they can do with Fludd today.
