If you want to give Cossacks 3 a go, the game came out recently and looks to rekindle that AoE look and feel to it, at least for me it is.

Could always go for XCom 2, Cities Skylines, Planet Coaster (still in early access atm), to name a few.
Planetary Annihilation is a decent RTS and then there is Ashes of a Singularity if you want to push your system.
Fallout 4, I wouldn't say is visually demanding, especially considering it's still using Gamebryo. I'd say battlefront looks better visually compared to Fallout 4.

Man, seeing this list just reminds me how big TBS has come in a way over the past 5 years. RTS has been on the decline compared to TBS. Wish it would come back in a big way like TBS has.

I used to be kind of an anti-First Person elitist but then I tried Fallout 3 and discovered that many FPS-RPGs can be played at a slower, more tactical pace with stealth and sniper builds. Even series like Borderlands allow you to play mostly as you like.

I'd recommend playing Dishonored in preparation for Dishonored 2.

Modding is OK but I'd want a reasonable standard of quality. 40 mods conflicting with each other and a jank UI with 200 toolbars is not my thing.

Dishonored is one of those games you can play as you like.  I played completely stealth, knocked people out, and almost never fought out-right.  Other people kill everything in sight, which actually changes the game.

Modding does take a bit of researching and thought.  It's not hard to figure out two things which modify the same values will conflict but that isn't for everyone.  However, using mods can take a game like Skyrim and make it much more beautiful and tailored to your preferences.  Not sure what you mean about toolbars, though, unless you mean MMOs like WoW.  Heck, in single player games, a lot of people use immersive UI mods that remove or minimize most of the HUD.

Divinity: Original Sin is a great PC game to sink you teeth into.
It has astounding graphics. It is a very in depth role playing game that you can play at your own pace. The graphics on it are amazing and put my old GTX 970 to work so your 1060 will work hard on it.

Just be warned, it is not an easy game as far as RPG's go and is a Top-Down, turn based, western RPG.

Elite: Dangerous has been the only game I've really been playing for the last year and half.
When I want something different, I fire up Star Wars Battlefront or Project Cars. These 3 games look absolutely stunning.
