I've heard these are hard and I really can't handle hard any more :(

If you have X, you may as well skip 2. X is a 'fixed' version of #2, which released in arcades with some atrocious slowdown. The only major difference is it gives away what the final enemy type in the game is pretty early on instead of revealing them in the last level.

there are a lot more differences like Day Times and different weapon locations

While that's true, that's isn't the problem per se. They didn't do much to change the gameplay or even presentation. We see more effort put into indie projects.

My memory of it is vague but I recall the Neo Geo Pocket and GBA titles being pretty fun. They have similar gameplay but feel a little more like console adventure games.

Regardless of who made them, the ones after 3 don't hold up, except maybe 6?

I had Anthology on both PSP and PS2, and both seemed to run quite well. Then again, I haven't played the PS2 version in years so I may be misremembering, I played the hell out of both versions though!
