Of course black bars don't give you a wider FOV. Pulling the camera back does. I'm surprised you found this to be a revelation XD

I did not realize this :( i thought it all had to do with aspect ratios and pulling the camera back would just make it further away without adding horizontal or vertical pixels

Field of vision is about the size of the angle you can see of the world. In the real world humans can see about 200 degrees, though only about 120 degrees with both eyes at once.
In a video game for example if the FOV was 90 degrees, you could turn the character 90 degrees clockwise and see an entirely new section of the world... whereas if the FOV was 120 degrees some of what you saw on the right of the screen would be visible on the left if you turned 90 degrees clockwise.
The higher the FOV the more of the game world you can see on screen (though a balance has to be maintained as too high can make it look distorted, especially with consoles where normally people normally sit with less of the screen in their real-life FOV... although this is becoming less common as more people are buying big TVs)
What would be ideal is if you fit your screen into your own binocular FOV (sit at the correct distance so that the edges of the screen are only just visible with both eyes at once) then set the games FOV to 120 degrees.
