Mario Kart Wii hands down. Loved the motion controls. All my friends say the motion control sucks, but that never stops me from racing laps around them :P

Can't be Wii, because it's too damn frustrating. And the battlemode blows.
Can't be DD, 'cause I never played it.
Can't be 64, because the rubberbanding AI ruins singleplayer.
Can't be Super Circuit, because everyone knows it sucks.
That leaves DS and Super. Both really good, but I'll go with the original for better music and great singleplayer. I base a lot of this off single player because the all have good MP.
"Now, a fun game should always be easy to understand - you should be able to take one look at it and know what you have to do straight away. It should be so well constructed that you can tell at a glance what your goal is and, even if you don’t succeed, you’ll blame yourself rather than the game. Moreover, the people standing around watching the game have also got to be able to enjoy it." - Shiggy
DS. Just perfect, and I have played all of the games so it's not because it's recent.
Didn't like Wii nearly as much, the music wasn't very good except for Rainbow Road.
Mario Kart Wii:
-is the one i played the most
-had the most fun with
-had the best courses imo
-fun online play
*i liked the bikes very much
-the only time i played mario kart 4 player multiplayer (haven't before due to lack of controllers)
Every new game tends to build off the last one and add new features, racers, courses, etc. They tend to get better as they go, so on that note I picked the Wii, but I will always have fond memories for all the other console ones.
Double Dash. A shame it cought so much hate for some superficial reasons, everywhere you could read about its "gimmicky" 2 player mode and extras...
- How is the co-op gimmicky? It's the best 2-player mode I've seen in a racer, one of very few games my girlfriend would love.
And in single player, 2 characters meant a degree of strategy. What's wrong with that? The karts didn't handle any worse due to the second character.
- Loved the individual extras, they were much sillier than MKWii. I remember choosing Donkey Kong and turning the track into a bananarama.
- Controls were really tight, my flatmate and I battled for milliseconds.
- Tighter courses, too (Yoshi's Circuit was my favourite)
and so on.
Currently playing: NSMB (Wii)
Super Circuit deserves a mention too. It's not the best, but it was by no means a bad game.

Rainbow Road (MKWii)
the one I liked the least was the n64, for me the controls were broken, then the game boy with poor course desing, then the snes one that started with a solid formula, then the wii one that was good but removed some stuff I loved about Mario Kart, then the ds one that had plenty of features, and firts mk:dd with the amazing items and controls
