what would someone recommend for stats to beat the Neochu to get the Growth Egg?

There's two ways to defeat the Neochu.

Cheap way - Have a SEN (preferably Snow) with over 15K HP and a MED. Use Vanille as your party leader and continuosly cast Death on the Neochu. Use a Belladona wand (Malboro Wand if you have it) for improved Debilitation.

Hard way - Be prepared for arguably one of the hardest fights in all FFXIII. You'll need to not only deal with the 5 microchus that start the battle with the Neochu, but he will summon 8 additional ones when he goes to 50% and 25% health.  Always take care of the Microchus first, since their combined attacks can decimate your SEN in an instant if left alone. And also, be on the lookout for his Screech attack. It can easily do over 10K damage if you're caught unnaware. Your best bet is to have a SEN/SEN/SEN configuration and whenever you see him roar, switch to that paradigm as he will launch Screech next time he attacks.

Start the battle with COM/RAV/SEN and use Fortisol and Aegisol prior to the battle, also consider giving your SEN (preferably Snow once again) a big amount of Physical Reduction items (General Belt * is preferable, for 25% physical reduction) and Deprotect resistance. After dealing with the microchus, put on SAB/SAB/SEN and give Imperil to the Neochu (this is very important, or else you won't even make a dent on his chain link bar).

After giving him Imperil, switch to RAV/RAV/SEN and Wail away at him. You should aim to have 700 chain before he gets to 50% HP. After reaching that step, he will summon the 8 microchus for the first time.

Now two things can happen. Either you're very lucky and your SEN uses provoke and provokes the entire microchu party to attack him, shielding your other characters from getting instant killed by the massive onslaught of microchus, or it doesn't. Consider this second case, and immediatly switch to MED/MED/SEN. This will guarantee survival for your other party members while your SEN provokes them all. Be mindful of Neochu's chain link, and attack him whenever you see it dangerously low.

After getting them all provoked, switch back to COM/RAV/SEN and destroy the microchus. Then, it's just a matter of RAV/RAV/SEN him until you hit 888% chain. Be sure to cast Imperil on him once again. It's very important that you stagger him before he gets to 25% HP. Another onslaught of microchus is pretty much fatal at that point. Once he's staggered, switch to COM/COM/RAV and smash him to pieces XD.

Your best bet for stats are 15K for Snow, 12K for everyone else. I had 2200 magic on Vanille when I fought him and 2600 Strength on Fang. Snow stats doesn't matter, but 1.8K strength is enough I guess.

IMO, the "cheap way" is the way to go. By the time you're strong enough to defeat neochu 'legit", you probably wont need the growth egg anymore so the reward becomes rather useless.

Actually, I defeated him the first time without using the cheap way, mainly because I was bored after 30 minutes of not getting Death on him. I was about 15K HP on Snow, 12K on everyone else, which is probably somewhere halfway along their main role levels in Crystarium Level 10

Pretty Impressive. Vanille had only 8K HP and I think Snow was about 12 K when I beat him the cheap way lol. I think I'd have waited for max crystallium to take him on otherwise. Looking back, it was never really necessary to even get the growth egg early because I got max crystallium ages ago and still dont have nearly enough gil

I have that same problem, and now the only viable farming point that I have is the Adamantoise on Eden, since Archlyte Steppe is infested with Long Guis and ShaoLong Guis >_<

I'm going to bother with them after I get 5/5 on all missions, just did mission 64 5/5 now. Pretty lame for the biggest baddest superboss in the game to be such a wuss. Heck, Neochus >>>>>>>>>>>>>>>>>>>> Vercingetorix in diffculty

You'll need to grind a bit in order to end chapter 11. Probably you could end it with 2K HP, but seeing that you're getting tired of the game, that would frustate you more.

3.5K HP for your party is a reasonable goal to end chapter 11.

Chapter 12 will require you to end somewhere in between of 5K - 6K

Chapter 13 will have you hit 7.5K Strength estimates for Fang only; 1.6 - 2.0K

Those are pretty much the stats that I remember thus far.

Alright, after watching a couple of youtube videos I decided I won't really bother with all the side missions post game on pulse. It's very disappointing that there isn't really any "Ultimate" baddy like in past FF games. I mean mission 64 is just a reskinned enemy that I've fought dozens of times, but with a hell of alot of hitpoints. I was hoping I'd get to fight that gigantic beast I see walking around in the distance. Instead of fighting him, his little sidequest culminates in fighting another reskinned enemy. Just doesn't seem worth the time investment, not enough bang for the buck. Imma go play cavestory now, love that game.

Trust me, there are some epic fights in the game, two of them are missions (mission 55 and 45, the Neochu enemies) and then there's the Long Gui enemies, a much stronger version of the Adamantoises.

Those alone are x10 stronger than any enemy in the game and make even Omega and Zodiark from FFXII look like small fry besides them xD

There are two grinding spots. First one is on Archlyte Steppe, there's a lone behemoth king there that you can pre-empt and kill easily for 4K CP.
Also still on the Archlyte Steppe, near the north/west exit, there is also another behemoth king that you can pre-empt, plus there's a fight between a Megastotherion and a Behemoth King that you can pre-empt and kill both enemies for 6.6K CP.

Second grinding spot is on the next area, Mah'Habara. There's a room with 6 bomb type of enemies that can be killed in 20 seconds for 7.8K CP

Yeah...but they are just reskinned enemies I've already killed, except neochu, which apparently I just need to use death on so I get get my grinding egg. I mean a game like this should know that epic presentation counts for alot. If I had gotten to fight that giant thing, then that would be fitting and awesome. Getting to fight a turtle I've already killed, but NOW his stomp does WAY more damage just doesn't seem worth the effort.
