Now although I think Halo is a big franchise, I don't know if you could say it is THE gaming franchise that defines the rest. That would be quite a stretch.

Well if Halo were to games what LotR is to fantasy genre, than we wouldn't need any more games. I think the best comparasing would be that Halo is to games, what Twilight is to books :D.
