Mario has a lot of games, but milked implies old and stale and Mario is really anything but that.
Zelda is the same way. There may be a lot of Zelda games, but each one brings A LOT new or builds upon the previous game (Spirit Tracks) so that it still feels good.
It's perfectly fine for a game to be a large franchise but just because there are a lot of them doesn't necessarily mean milked.
Now Guitar Hero, that is a great example of milked to death.

Mario and Sonic at the Olympic Games -- true, but I also wouldn't call that a Mario game, more just a cash in.
Mario Party 8 -- Yeah, but again, not really what I would call a Mario game. It's exploiting his name just like the above, but you can't say Mario games are milked because of those two.
