I'd say they're about on par with each other. Uncharted tops Killzone in polygonal and textural detail, plus there's just so much stuff in every scene (plants, rocks, drain pipes, etc.). It also has better player animations, shown off especially well through melee combat. Killzone 2 has better hit detection and ragdoll animations and much better particle/atmospheric effects (just look at the trash floating around in Salamun Market, or the embers in Phyrrus Rise - and then there's the explosions). Killzone also has semi-destructible terrain, while Uncharted does not.
They have similar lighting models, but Killzone 2's lighting system is given more opportunity to shine throughout the game, given the darker environments, bright muzzle flashes, and uses of other light producing effects such as the Lightning Gun. Hell, even a of Helghast goggles is effective at showing off Killzone's superb lighting system.
It's effective use of lighting and superior particle effects give Killzone 2 a more vivid, realistic graphical presentation, but Uncharted 2 packs more details and probably pushes the ps3's hardware farther than Killzone.
Killzone really has an artstyle that's hard to beat (yaya, brown and gray). It truly has atmosphere.
