On the first disc, he is this cocky guy that seems to face adversity like no other and to have everything under control. But then, Aeris is killed and his past completely exposed to him. Those two things haunt him, and destroy his " I'm a tough guy" armor. His inner self is completely exposed. He is a coward, and through a great deal of disc 2, he can't cope with things.
However, the affection for his companions and love for tifa make him come back, and realize that he can't just give all hope without fighting for what is right.

Now they were one of the few things that I didn't like about cloud.
His sudden turn around never convinced me, it seemed like it "had to be done" to make him like the typical "hero". It almost seemed "fake" to be honest with you.
While he had character develpment, it wasn't convincing, that was my main problem.
But there was something about him that made him so popular....your 2nd last sentence is probably that reason.
About personality, I would still claim I never got much from him throughout the whole game.....with a main character, you want them to be on screen due to a stunning persona....an aura. Cloud never had that for me.

well, I still dont see how going through an entire game whining about nothing, and then realizing at the end of the game "hey, Im whining about nothing" makes him a dynamic character. Even at the beginning of advent children, he is still moping like a brat and wont except that life isnt always fair and that he really doesn’t have it that rough. it takes him a 3 disk game and a movie, just to come to the realization "you know, life isnt that bad. you just need to look right in front of you to find your purpose and the people that care about you." A real hero is someone who self-sacrifices, like Tidus from FFX.

To me Cloud was trying to be alot like Zack
It's all in Crisis Core's ending, during Zack's final moments.
Remember, Zack said this to Cloud before he died: "For the both of us. You're gonna live. You'll be my living legacy. My honor, my dreams, they're yours now."
Throughout the entire story of Crisis Core, Cloud served as Zack's literary foil. Both of the came from a backwater town. (Gangaga and Nibelheim) Both of them have dreams of becoming heroes. However, Zack is an exceptional fighter and Cloud was...well...a weakling. Yet, this difference infused Cloud with a great sense of respect for Zack. Zack is Cloud's idol. Zack is Cloud's hero.
Moreover, Zack was saving Cloud during the events that happened in Nibelheim up to the game's ending. Cloud essentially owes his life to Zack. With Zack's final words, Cloud became determined to become stronger. He deems to repay his debts by living his life as Zack's legacy.
Sadly, as we all know in FF7, Cloud lived his life too much like Zack... to the point that he thought he was Zack....and Zack's memories were forgotten.
Aerith's death made him realize why he was in pursuit of Sephiroth
and gave him more confidence to trust his companions more...
He may be an emo at first but i liked how he struggled through that
and this helped his character to develop and become a more likeable character.
