Go to "Equip items" and select an empty space then select the unit you want to unequip.

So you don't really unequip so much as equip nothing.

Hey what's better between a red and silver dragon?

Depends on how your alignments are going to work.

Silver Dragons require high alignments to promote.

Red Dragons Middleground alignments to promote.

I would probably say Red Dragons... if only because you'll want to team them up with a Dragoneer/Dragonmaster... and the Dragon Master needs between 40-60 alignment to promote... while Red Dragons are 35-65.

Other then that they're even.

Silver Dragons and their promotes look cooler though in my opinion...

Dragons are not worthwhile.

It's like asking who to pick between Lyre and Kyza in Radiant Dawn. 

No matter who you pick, there are still dozens of other units that are way more useful in every situation. 

You may as well just pick the one that you think looks cooler.

I suspect it's both, although I never playtested enough to be absolutely sure.
