If we're just talking about visuals, F-Zero and Starfox are the only real ones i can think of. Pretty much all their games would benefit from more power in other departments, so long as they properly used it.

Every single game will benefit from HD IMO

I think we should wait until Wii Zelda to judge just yet. Twilight Princess is a GC game.

Nintendogs Wii. In HD it's be like a real dog was trapped in your TV. Poor guy.

Endless Ocean would be gorgeous in HD too.

Metroid, Zelda, F-Zero, Pikmim, Star Fox, Donkey Kong, Smash Bros, Pokemon even FE would all look great in HD. Wouldn't add anything really but look great.

Mario, Kirby and toon Link? Couldn't hurt.

more pikmin and enemies in pikmin

bigger/more complicated tracks with more racers on them in f-zero

a gigantic overworld where theres actually stuff to do everywhere in zelda

gigantic levels to explore in super mario galaxy

Like what PC has done for years now. Even though HD consoles have finally starting to catch to PC when it come to resolution yet they can't take the full advantage of HD because  they are still too many people  have their consoles hook up to a SDTV.

More characters on screen can easily be done, but the other elements haven't been done because they require more content creation (and content is not cheap).
