Oblivion was dumb down where leveling up your character was totally pointless. The whole world level up with your character just like FFVIII. a level two character is all you need to pretty much do anything. That kind of kills the whole point of a RPG.
So if you have a PC then play the PC version with mods to improve gameplay.

Valkyria Chronicles is not intuitive. You sound like you want something simple to play with not a lot of button pushing. Flower and Flow are very easy game to get into. Most of the PS3 exclusive are going to have complex control settings. Ratchet and Clank and LBP will probably be the easiest exclusive games you can play. Unless you want to play SingStar or Scene It. You can also give Katamari Forever a try if you're into that sort of game. Otherwise you may want to just go back to the Wii, were most of those games have kiddy controls.

Don't get Oblivion it's too western and nowhere near a Sega/Nintendo type game + it's about 3 years old and a bit long in the tooth. Some people are recommending games they enjoy rather than what they think you will enjoy.
You should just keep playing the games you mentioned until you get the hang of it and you will enjoy them a lot.
I love how the guy says he's played some uncharted and isn't fond of it and 20%, of the people tell him to play U1 and U2....
Just from experience, my GF liking simple controls too, try to avoid all shooters for now. (that's Killzone, Resistance, MSG, Uncharted...) Dual stick control is about as painfull as it gets for people liking simple controls...
You seem to have wanted a console for graphical prowess, so try a racing game... that's a sure thing for impressing you.
Other games you might like (and have good ratings, but are not PS3 exclusives like most games that have been mentioned up there) : Prince of Persia, Mirror's Edge, Lego series (Star wars, indiana jones, batman), they are all damn cheap too (at least where I shop). If you like rythm games... you can try Guitar Hero ^^ milions love it so it can't be too bad (only played demoes myself, it was fun even with a controller).
Sorry can't say more I don't have a PS3 (hence the non exclusive games I suggested).
