Uncharted 2 may end up overshadowing Demon's Souls if you play it first. I'd recommend playing it ASAP, though, as it's the best gaming experience I've ever had.

Uncharted 2 first. Demon's souls is a far more engrossing experience. once you start, you just cant stop.

Well I can can tell you - started with Demons Souls. Amazing game. Something I really missed on PS3. Proper, dark RPG. Now having a break and Uncharted 2 music is already playing....
