I guess I'm a tiny bit late to the party but...
I love watching Blu-Ray movies, but I won't buy them often. I never bought DVDs either. I have netflix so I just rent them when they come out. I recently watched Monsters vs. Aliens (ok movie) and X-Men Origins: Wolverine (excellent movie).
I own three movies on Blu-Ray: Iron Man, Transformers, and The Dark Knight. Out of the 3 I own, I probably like Iron Man the best.

Then either 1 of 3 things is happening.
1) you are sitting too far away from your TV for the size of it
2) you have poor vision and need glasses
3) you are unobservant to the most obvious differnces
Most people probably fall under #1. My TV is 32" and I sit ~8 feet away. With a 32" TV I should be sitting about 6' away (I have a 720p tv), but that would just be crazy as I'd have no room for people to walk by in my room then.
Anyways, in general (this graph is for the average person) if you use this graph you can determine what size TV you should buy, or how far away you should be sitting to notice a difference.

Want to know why you don't see a difference?
Because you have a 1080i tv. Also, you are likely watching your DVD's on the PS3 which will upscale them to look better than they would on a normal DVD player.
The difference is really noticed on a 1080P HDTV that is larger than 40" (not saying that a slightly smaller one can't show the difference).
So if you really want to see the difference, you would need to ugrade your current TV to a 1080P one. There, I just gave you a reason to go and buy a new TV and to help out this bad economy. :)

I rent movies in Blu-Ray only now, but i'm not big on buying movies, so the PS3 comes in handy for overnight parties, or small movie nights at my house

I currently have 23 Blu ray titles with favorites consisting of The Godfather trilogy, Band of Brothers, Casino Royale, Planet Earth etc. I'm really looking forward to the Lord of the Rings Extended Editions.

my TV is 34 inches big, and i am sitting about 3 meters away from my TV.
so ~10 feet away on a 34" TV, or in other words you are in the "Full benefit of 480p is visible" range. Buying a 1080i TV was essentially a waste of money for that viewing distance. Of course, changing the viewing distance is easy and is a lot cheaper than buying a 55" TV 
EDIT: of course, those estimates are based on an "Average" person and your ability to notice the difference can be above/below average.

I've 50+ Blu-Rays..Yes I actually shocked myself when I counted that many. No doubt man, Blu-Ray is the way forward.
Ps You'd Better add "Rocky: The Complete Saga" to that list of yours..
