I'm selective in what i want on Blu-Ray, for example, i still get Stand-Up comedy and documentaries on DVDs, but Music Concerts in BR, in the movies department, the majority of comedies and dramas i get them on DVD (but some of them are starting to look very appealing on BR, like The Hangover or The Ugly Truth), action & Sci-Fi is Blu-Ray's best friend (although, there are some that are good enough on DVD like the Cranks) Super-High-Budget ones like Lord of the Rings or The Dark Knight, definitely on BR...
Fav Blu-ray is definitely Kingdom of Heavens director cut.
I had the regular version in DVD and the Blu-Ray looks a lot better ( and the director cut is like 1h longer and really adds a lot to the movie).
The winter scenes at the start as well as the siege of Jerusalem look fantastic...
Otherwise the Dark Knight and Wall-E are greats Blu-Ray too.
I have 83 Blu-ray's ATM and I'm now changing clothes, get out and get some new ones. 
The best one I have must be "Final Fantasy VII : Advent children".
2nd is "I robot" with Will Smith (looks FANTASTIC!).
3rd would be "Ghost Rider" with Nicolas Cage.
#1 on my wish-list is the Blu-ray release of The Lord Of The Rings! 
As for LOTR I am a huge fan but I won't be buying the Blu-Ray until the extended versions come in Blu-Ray...(once you've seen the extended you don't want to go back to the theatrical version).
I have all the DVD versions and will buy all the Blu-ray versions no matter what. 
I have quite a few blu-rays, just under 20
In terms of ones coming soon, Star Trek is my most anticipated
However, in the long run, I really want the complete Lost collection, Star Wars and the Extended Lord of the Rings trilogy
