I thought they got that one because the cost of spreading FF7 on an equivalent number of cartridges was obscene.

Nope. That's why it wasn't on the N64. Yet Sony got publishing rights, and excluisve rights to Final Fantasy VII, Final Fantasy Tactics and two other games i can't remember the names of right now for putting FF7 in the front of a 100 million dollar advertising campaign in the US... and a similar budget for Europe.
Afterall when FF7 was announced Saturn was outselling the PS1 in Japan.

Makes sense. It makes sense that the cartridge part was only half the explanation.
So do you know of any other games that Sony did this with?

Metal Gear Solid seems likely as well. It was in a similar case. MGS was originally planed for the 3DO... and later switched over to the PS1 exclusivly shortly after it and the saturn released. Despite the Saturn holding the early advantage.
Ridge Racer was conspiciously only on the Playstation as well when other Namco games were multiplatform and this one was popular in the arcades and a fairly surer hit then the others.
The same could be said of Air Combat.
Bushido Blade was one of the other SE bought exclusives as well.
Used have a fairly large list... but as you can imagine it's hard to re look things up now a days with the terms "Playstation" and "Paid exclusivity".
