The initial demo was developed as a PS2 game, later OKed by Sony to be LittleBigPlanet for PS3:

Like its descendent, Craftworld was a side-scrolling game with 2D physics-based gameplay. However, Craftworld featured 2D graphics as well, and a placeholder protagonist named Mr. Yellowhead, who fittingly enough, had a yellow head. The player controlled Mr. Yellowhead's arms with the right analog stick on a standard PlayStation 2 controller and his legs with the left stick.

considering PS2 dev kits are cheap as heck and were pretty cheap back than there isnt a question why a demo of the game was made on the PS2. I wouldnt be shocked of Resistance wasnt demoed on the PS2.

A neat fact. Beating the final level (boss) without dieing gives you that costume. It's awesome running around as yellowhead! :)
