^I really like Bacchus's character design and model. IMO, he is the coolest looking playable character in the game with the red haired dude close behind.

Firstly, two of those games could certainly have done with more time in development, we don't know about SO. SO4 and IU are tri-ace made, so we are comparing TLR with FFs. We don't know (well I don't) when TLR was started, so for all we know it could have been going for ages. Of course the Final Fantasies are much much much bigger projects and more important that they are great, and they are being created on new engines, whereas TLR is a UE 3 game.
I am trying to avoid getting excited about this until an EU release date is announced

Actually, work on the Xbox 360 version of the game won't begin until the PS3 version is finished. Square-Enix will port the game to the Xbox 360 in the same time it takes for SE to translate the game into English. The engine used by FFXIII was designed to be cross platform from the start and therefore already works on the 360. With all the art finished in the game, it's just a very simple port to the Xbox 360. SE has had a lot of experience with the Xbox 360 so I am confident they can port it in time.
The reason it's taking so long is because SE keeps changing their mind about FFXIII. It started out as a PS2 game then they started from scratch on the PS3 and they've kept on changing technologies and other elements.

They also had a lot of trouble getting their in-house engine up and ready. Unlike Capcom (they had their Framework engine ready and started to release next-gen games in 2006), Squeenix's White Engine/Crystal Tools was quite more troublesome.
