Right on bro. Off the top of my head
I think Shenmue should be revamped. - It was too aggressive for its time and would cost a lot less these days. Plus it would be hard to get some people into the whole saga starting off on a newly fresh looking third installment.
Jet Set Radio - The original was better than the follow up, although the follow up was quite good too. I think the first games controls would be a shoe in for the Wiimote: Imagine graffiti tagging by having to move your Wiimote in certain patterns.
REZ - This game is an experience that just we just need more of.
Skies of Arcadia - We need another sequel to this great RPG! This was equal to how great FF's use to be.
Grandia - This is one title that I think started to slip way off course. This one fits the original question well, and really could help itself out by getting back to the Grandia II formula.
Chu Chu Rocket - A fantastic puzzle game that would do well in this feverish "casual" climate these days.
Marvel Vs. Capcom - Capcom lost their rights with Marvel, so this one just died at its peak. I wish Capcom would be savvy enough to at least try and see if Marvel would let them do a DC vs. Capcom version.
River City Ransom - Is it just me or do the characters designs from EA's My Sims scream for a 3D remake of this classic?
Road Rash - This one would do really well I think these days. Online would own and the new power of todays consoles could make this incredibly graphic and hilarious.
Eternal Champions - With all the cries for blood from the gaming community, I'm really surprised this one hasn't been revamped for a 3D uprising. If done right, this one could easily out do MK these days.
That's all I can think of at the moment. Not too hard to see I'm a bit of a SEGA fanboy. Thing is, Nintendo and many other companies have continued to evolve and keep many of their staple franchises fresh and innovative for my tastes. Oddly enough mainly SEGA appears to have let a great many of its quality franchises die off.
