I'd actually recommend Suikoden II first.
That is if you're testing the waters if the series is worth your time.
If you're already dead set in playing the whole series, then by all means start with the first one.

The Suikoden series has always been about a great story with a small budget.
Suikoden IV and V already looked below average(for it's time) and unpolished(technically with lag and slowdown), moving to the HD era(or even with the Wii considering they we're already struggling with the PS2) would pretty much be extremely hard for the developers. From where I'm standing, going portable is the best move they could make.
