I don't think there are any plushie plans at the moment, though I think it'd be stupid of Sony not to make them.

maybe in Japan.... i pre-ordered my japanese copy at Amazon.jp just to get the real sacboy
i hope i can make it to this year's TGS in Oct, maybe they will have sacboy for sale at Sony's booth

Media Molecules have said they're working on it. Details to be revealed soon/ish. They'll presumably be ready before the game goes on sale.
Sackboys would sell so awsomely.
