Hmm creepy last bosses that come to mind for me include - The giant sephiroth monster in FFVII, various resident evil bosses, and from what I've heard the last boss of silent hill.

I remember, long ago, fighting Giygas in the morning before I left for class, and still feeling it long into the night.
Best fight in any video game, bar none. I've got to play it again sometime, might have to break out the old SNES for that one.
