I dont understand?
all that matters is your personal fave, my favourite game (IMO the best game of all time so far) is Gears of War (PC/X360), im sure other people have other faves though.
Most games that make "best games" lists now still hold up as enjoyable playable games no matter when they were released. You think the original Super Mario Bros. is only on "best games" lists because it was influential? Hardly. That game still plays amazingly to this day. The fact it basically created the entire game industry as it stands today is an afterthought. SMB is still a great game, and created an entire genre which has basically only been bested by other games in its series.
Let's take a look at some other standards:
Legend of Zelda: Still completely enjoyable and a great game to play through. The later games, like LTTP and OOT, redefined the adventure genre, and added to the formula, but there's a reason these games are still held in high regard. They're still playable after 20 years.
Pac-Man: Nothing about this or Ms. Pac-Man has lost its fun factor in almost 30 years now. It's the exact same game, and most likely, you (and I) aren't that good at it, and will keep playing it to best that high score.
Tetris: Like Pac-Man, this game hasn't lost anything with age. It's simple, yet will keep you playing. One of the first, and yet still arguably the best, among puzzle games.
Final Fantasy VI/ Chrono Trigger: I'd consider these two neck and neck for the best RPG I've ever played. Didn't need fancy graphics and cutscenes to make me actually give a shit about the characters. FF VII has absolutely nothing on either of those games. Go back and play these now and they're still absolutely amazing games.
When you look at "all time best games" lists, look at the games that comprise them. Most have stood the test of time. A lot of folks would place GTA 4 at the top of a lot of "best games of all time" lists if they made them out right now, but in 5 years, will anyone care about it? Once GTA 5 hits, then GTA 4 will just be thought of as another old, outdated version of a series, which won't be played, because the newer, prettier version is available.
Standing the test of time shoudl be the first and foremost test for an "all time great" game. People can still pick up a controller, and play Super Mario Bros and have a blast. If people are still doing so with games like, for example, GTA, Halo, and Devil May Cry 20 years from now, then they can enter the argument. If a few years down the road, nobody gives a shit, then why should those games be considered among the best ever?
The dedication you show to any particular console or company is inversely proportional to the number of times you have gotten laid. If you get laid enough, even if you prefer a certain brand, you just don't give enough of a shit to argue about it on the internet.
Too many arguments would break out over which games should be in the list. We all have different opinions. Popular games with high review scores and high selling games could be considered garbage by some people.
I would hope that "fun" isn't the only reason gaming exists as it would limit what gaming can become.

I still think Super Mario 64 is the most fun single-player game, so...
Super Mario All-stars is the Orange Box of 2 generations ago. That's all I have to say.
