Some of the more interesting points I got from the video was:
-They looked into switching to Unreal in 2017, but decided not to because Unreal couldn't replicate the "scope" of Halo rather than the "feel" of Halo
-It's alluded to that Infinite was going to have a role system (Tank, DPS, Support, etc)
-There was going to be a "socket" system where Spartans could have cloaked armor, silent movement, hacking, night vision, melee boost (more hero shooter stuff)
-Multiplayer was to launch in Fall 2019, campaign in Fall 2020, Atriox campaign DLC in Fall 2021 (multiplayer was going to have a story go along that led to the story of the main campaign)
-Multiple biomes
-ODST's were going to return
-UI was going to be more akin to Halo MCC, which includes having your friends list
-REQ's were going to be back, so the return of Warzone
Ultimately, there was a LOT of development time on what Infinite was originally going to be, and I'm guessing the vast majority of it was thrown out soon after the making of this documentary, which is why it had been shelved for 8 years. But it's clear that what we got was only a fraction of what 343 was planning.
