If those 8 years were good for something than we would have the game right now or close to release, but it wasn't that long ago (October, last year, was when the rumor came out) that Ancel was given the greenlight by Ubisoft to continue with the project.

Not all developers got their kits late.
Ubisoft has always been very close to Nintendo, so, it's safe to assume they got them earlier than other western companies (think japanese developers were amongst the first to get them). And this collaboration might had been a good reason to get Ubisoft devkits sooner rather than later.
Of course, this is just guesswork and should be seen as such.

With that in mind, the chances of seeing the Mario x Rabbids, are higher.

this is what I would want but I'm afraid it's going to be the lame Rabbids thing. Hope to be wrong because collaborations like that usually don't make for particularly new or exciting game content
