That's a pretty impressive list of demos if you ask me.  I planned on buying a few of these anyways, so now I'll get to try them out beforehand.

Those are some pretty clever games to demo imo. All of them (besides Wayward Sky) are among the most prominent PSVR games.

Still it'd have been awesome with demos of Resident Evil VII, Robinson: The Journey and Farpoint.

I'd actually argue that Headmaster is the throwaway from that list. It's a really simple game while Wayward Sky is a narrative driven puzzle game that looks like it could turn out to be really good.

For some reason Headmaster had found its way to my list and Wayward Sky hadn't. But you're probably right.

My few experiences with PSVR have been very positive and I'm eager to try more. Hopefully one of my friends will buy one so that I'll be able to postpone buying it myself for when it's cheaper

I kinda want a Neo before PSVR (especially since my brother in law is interested in buying my OG PS4). Do you think it's a bad idea to release 2 expensive hardware products within a couple of months and potentially having them cannibalizing each other?

Nah, I think they are different enough that the overlap of people who want both but are only willing/able to buy one is fairly small.

I have mine pre-ordered and the money put aside already. So I'm very excited to be able to try out these games before I put any more money down on them.

No, all of the games on the demo disk require PSVR to play. Though some PSVR games will be playable without the headset.
