The most recent I can think of is Pokemon Black, at the very beginning when Professor Juniper asks if you want to go on your adventure, I answered with a resounding "NO" just to see what would happen. Nothing really of note happens, she just asks you again and again until you say yes.

I'm sure I've done it sometimes. One in particular I remember was at the start of TLoU, where you're running away with your daughter in your arms, and you see a zombie attacking someone. I was told to run, but I decided to stay and watch the person get attacked. Then the weirdest thing happened. After the zombie finished attacking the person, that NPC then moved to a standing position with their arms spread out, like those model images of characters.

It was bizarre to see, and I wasn't able to escape from the zombie, but it was still funny to see xD
