Wii: I usually anticipate the next awesome game due out. So Mario Kart Wii would be that game, and considering how much I played MK64 and MK:DD, I really anticipate it. At the moment, though, Brawl has me very satisfied (and playing regularly).
PS3: It was Gran Turismo 5. However, that's no longer due out in 2008 -- probably mid-late 2009. And I no longer anticipate the game much after playing GT4. The problem I have with it is that it's a floaty/slippery arcade game, *not* a simulation. Maybe I was spoiled by Forza 2, which is a simultation with accruate physics, but there were some blatent physics problems with GT4 (fiction calcuation at the tires could not possibly be correct), and the cars feel floaty / have poor grip. I've driven some of the cars in that game in real life. Plus, the 360 controller lends itself much better to racing games than the Dual Shock controllers do.
