I'm pretty convinced that the game would be done by this holiday season and the only reason why they are delaying it is to match the NX launch, so I don't see why they would delay the Wii U version.

Likely the same day. All the marketing will go toward the NX version. The Wii U version of the game will look like Nintendo took a shit in a game case and then shipped it off, and they will treat it as such.

Two weeks later at most. Still thinking this time they release them on the same day, but maybe I'm expecting too much in this day and age.

They can do simultaneous release since the Wii U will be beyond irrelevant at that point so there's no fear of it stealing much from the NX version. Nintendo themselves agree, predicting only 800k Wii U sales for the fiscal year.
