Final Fantasy VI, biyatches. Epic story, great character development, unique character abilities, possibly the best music on the SNES, and it was 2 players.
Seems unfair to just list one RPG, given the many criteria by which you can judge an RPG... So I'll be defiant as usual and list several. Obviously, these are all my opinion, so kindly don't take offense if you don't personally agree.
Most Engrossing Story: Xenogears
Best Written Story: Final Fantasy VI
Deepest Gameplay: Vagrant Story
Most Entertaining Gameplay: Tales of the Abyss
Most Replayed: Castlevania: Symphony of the Night
Longest Played: Star Ocean 2
Greatest Pick Up and Play Factor: Dragon Quest Swords
Overall Best Experience: Final Fantasy VI

I've enjoyed a lot of RPGs, but 4 have really rocked my world. In chronological order: Dragon Warrior, Baldur's Gate, Star Wars: Knights of the Old Republic, and The Elder Scrolls IV: Oblivion.
