That video is almost a minute of analysis per second of trailer, nice. Also, why are so many goats there?

Older footage showed Link riding Epona along a bunch of wild horses too. And lots of birds. And that was early early footage. I would imagine that along with being massive, Aonuma is shooting for Hyrule being very organic, and having a lot of wildlife, to feel like a living world this time.

Yes, in older footage we had herd of horses and some deers, and now we have birds and goats, also eagles in sky.

That book is intriguing.

His old shield didn't have a Sheikah symbol on it. It was just an eye. Lots of things in Zelda have eye patterns. I also don't think that the Sheikah symbol on that book means anything when it comes to him. It could literally be a Sheikah artifact and nothing more. Doesn't mean there are Sheikah in the game or that Link was raised by them.

Intriguing none the less.
