The controls in GT demand a lot from the player and getting really good with the game requires a little muscle memory, which I expect to be the case with actual professional racing. The same engine and controls wouldn't work in an open world game where the player has to dodge traffic and drive in newer sections more often than not. They need to rework the game's controls and engine to make it more accessible, but It wouldn't be the same game imo. Though I'd like to see Polyphony's take on this different subgenere of racing games at some point.
