Hmmm, it would not, but that's an interesting possibility you put on the table, having the game on both like with TP, however NX is due when late 2017 - Q1 2018? it seems way too much time for the game to release (on Wii U) and/or waiting that much time after its original release to put (the remake?) it on NX as a launch title, so it is most likely to come out only on the Wii U. Holiday next year for sure.
Nope, I always buy consoles based on what they already offer rather than the promise of what might be offered in the future. (Been the victim of too many cancellations etc especially with SEGA's demise) so it won't affect me at all even if they cancelled the Wii U version outright.
Guys, just to play devil's advocate here, how do we KNOW that Zelda will release in 2016? On the latest release calendar, it was listed as TBD. It could theoretically release in 2017. Also, my theory is that the reason why it's not being shown at this years E3 is because something is being changed and/or added to the game that has to do with NX.
if the NX was a home console, the absolute earliest we would see it is November 2016, if not the November the year after we would assume. Even though Zelda is pushed into 2016 I don't think they're shoving it back one full year for whatever they need to do.
That being said if it does get pushed to the next system I will be less than pleased.

Wii u is one of the best Nintendo consoles regardless of when Zelda comes out! And if X lives up to the hype and star fox isn't all motion controlled Wii u could be my favorite console of all time!!!!!!
As long as it's on the U, it shouldn't really matter if it's also on the NX.
