I just dont get the hype about achievements, especially when there are this many some of them are just stupid. Should you really earn a reward for beating a game on easy?

Noone is gonna really play the whole game on easy unless its a kid. So its nice for that kid to get rewarded too. Which is also why they stack if you go straight to Heroic or Legendary co-op.
