Half:Life 2 looked impressive at launch.

Metal Gear Solid 2 looked great.

I think the first one was Donkey Kong Country, sometimes i just stayed in front of the TV watching that beautiful game :) ... nice memories.
something newer ... i think i have to say Resident Evil 4 on GC and Shadow of the collosus for the PS2 .. and now ... i think Gears of war really impressed me the first time i saw it... ooh .. and Crysis too !!

Wii Sports. The first time I played it I thought, wow, when I'm having this much fun, graphics are irrelevent. :D

Seriously though, good graphics dont neccesarily need to be photorealistic. There is a fine balance between going overboard on graphical effects at the expense of frame rate and clipping etc. Sometimes simple graphics are more effective.
