Back in the day Goldeneye had some great graphics.
Half:Life 2 looked impressive at launch.
Metal Gear Solid 2 looked great.
Recently COD4 blew me away.

Gah! Did you not play the PC version? There was a huge difference visually.

I think the first one was Donkey Kong Country, sometimes i just stayed in front of the TV watching that beautiful game :) ... nice memories.
something newer ... i think i have to say Resident Evil 4 on GC and Shadow of the collosus for the PS2 .. and now ... i think Gears of war really impressed me the first time i saw it... ooh .. and Crysis too !!

Uncharted,,and i m talking about the game's graphics not just cut scenes,,,,the game is so beautiful that some times I just stop to enjoy the view
Shadow of the Colossus, Team Fortress 2, and Wii Sports are the most recent examples.

In (roughly) chronological order:
Game Over (Amstrad CPC)
Starglider (CPC)
Castle Master (CPC)
Wolfenstein (PC)
Doom (PC)
Tomb Radier (PS)
Gran Turismo (PS)
Tomb Raider 3 (PS)
Gran Turismo 3 (PS2)
Jak & Daxter (PS2)
Motorstorm (PS3)
Resistance (PS3)
Gran Turismo HD (PS3)
Uncharted (PS3)
Wii Sports. The first time I played it I thought, wow, when I'm having this much fun, graphics are irrelevent. :D
Seriously though, good graphics dont neccesarily need to be photorealistic. There is a fine balance between going overboard on graphical effects at the expense of frame rate and clipping etc. Sometimes simple graphics are more effective.
