Gears of war showed what the xbox 360 was capable of, and is still the best looking 360 game.

I was amazed and actually drowled at those amazing graphics.

Then Crysis just blew it into a black hole, that game just made me say "wow".
GT5 is a close 3rd.

Starwing (Starfox) on the SNES - Absolutely incredible, a true definition of pushing the boundaries of technology. Great stuff :)

those are some of the games that have most wow'd me that i can remember from the 16-bit era till now.

 

also shadow of the collossus, forgot that one, absolutely amazing art style to it despite technically not having great graphics. still makes me say wow today even after games like gears of war.

There have not been many games that have made me say wow but here's a few, graphic wise:

1. Okami(I've never seen such a beautiful game and in my open it has the best graphics in any game to date)

2. Legend of Zelda: Wind Wake(absolutely stunning when I first saw it. Just thinking about the game makes me want to go replay it.)

3. Star Wars: Rogue Sqaudron(was the first game that I ever really played and says hey this looks really real ya know. Graphics for the time were stunning)

4. Crysis(of course Crysis. Looks very realistic)

And those are just a few. Really haven't seen a game since that has made me say wow. Those games really were some of the first of their kind and that's what made me say wow to them.

Metal Gear Solid 3 Cutscenes and also God of War cutscenes. Not soo much the graphics.

but i would have to say the first game that really made me say wow would have to be FarCry
