FF7, it single handedly sold me on what the PS1 was capable of graphics wise.
Assassin's Creed. I love the view points; the cities look absolutely amazing.

nothing against wii sports, but im pretty sure no one seeing the graphics when "wow." At least not in the way i described in my initial post.
As far as older games go...
Super Mario 64, LoZ: Ocarina of Time, Goldeneye, Dark Cloud, Super Mario Sunshine, LoZ: Wind Waker, and Shadow of the Colossus.
