It's not like the glitches I have encountered are constant. They just happen every 4-5 races. I am sure it will be smoothed out in a llittle while.
Thing is people were expecting the servers to crash after launch due to the sheer amount of people. So far it has hold up with only infrequent lag. I'd say that's a good thing... maybe.

In the second video, you can see she gets a boost as she lands.
I know in MKWii if you timed it right you could land and get a boost by shaking the wii-mote, therefore negating some of the slowdown caused by being hit by items.
Is this still doable in MK8?
That's definitely lag, happened to me twice, thought I had the race in the bad just to end 3rd lol.
Just hearing the word "lag" makes me excited! I have a lot of experience in playing with lag. LOL has taught me well.

That was never a thing! If you get hit then that's it, you're stunned for a set time depending on what you're hit by. The only thing shaking the controller did in MKWii was trick off ramps and lessen the damage from the POW Block and only the POW Block.
