I never found any of the souls series bosses to be hard, imo the bosses on this series are much more about the concept than the fight itself (like Maiden Astreae, The great Grey Wolf Sif, The Pursuer of the Cursed - thats suposed to be his full named Im not making it up - Last Giant, The Old Dragonslayer - aka Orstein). There are some bosses here and there wich ar emore chalenging but overall I never realy had problems with any of them ever since Demons Soul.
Its getting to the bosses that are hard on the Soul series, and DS 2 is the hardest soul game ever.

I would say Dark Souls have more difficult boss fights than Demons Souls, Demons Souls was the hardest for me because I was a noob, but I replayed it last year and the final boss was the only one that gave me some trouble, even Maneaters weren't as hard as I remembered, but in Dark Souls Smough & Ornstein is always hard without summons (unless you're playing a caster), Four Kings and Demon Centipede can also surprise you if you're not careful.

I never play a caster and I died 3 times to Smaugh and Orstein on my first playtrough, 1 shot the Demon Centipede (seriously you think the Demon Centipede is chalenging ?) and Four Kings is only hard on NG+ up on NG its one fo the easiest bosses on the series.
And from demons souls the Maneater were more or less chalenging (I remember dying 4-5 times) and Allant gave me some troble I think he killed me some 10 times, other than these 2 nothing stands out either.
Also everyone keep saying "any hard boss like Smaugh and Orstein" even tough I never found them hard thats 1 boss on a roster of 20 or somethign the devs are not aimming to make the bosses hard, they realy arent they want the bosses to make sense coceptually and the fights to be fun.
TLDR: The bosses have always been easy its the rest of the game that isnt.
