Well, Googled now and while I now know the franchise, I don't know the game, so I'll let someone else guess.  They're good movies atleast.

After much digging, I don't have a definitive answer. But my best lead is Star Wars: Rebel Assault II.

I just remembered what it was that they were called in Suikoden 3. It's ironheads, not bucket heads. That's why I incorrectly answered Suikoden 3.

That quote is from the intro to Chapter 7. Where you have to fly through a narrow canyon in a TIE fighter. In the video, which is the intro to Chapter 7, the part where the quote is spoken is at 1:33 onwards.
